    Step1


    TO MAKE THE BREAD:
    Mix dry ingredients in a bowl

    Step2

    Slowly add water and mix to a sticky dough

    Step3

    Knead dough on floured board, put in a bowl and cover with a tea towel.

    TO MAKE THE FILLING:
    Peel potato then boil and chop

    Step5

    Wash and dry all the greens

    Step6

    Chop greens and mix with other filling ingredients

    Step7

    Stir fry until soft and drain away excess fluid,

    TO MAKE THE BOLANI:
    Divide dough into 8 equal pieces and form into balls

    Step9

    Roll out each ball with a rolling pin into pancake size 5mm thick

    Step10

    Place a portion of filling on one side of the dough, fold and press the sides together

    Step11

    Heat oil in a frying pan and fry Bolani on each side until golden (about 2 – 3 minutes on each side)

    Serve immediately with the yoghurt dipping sauce.

      I made this the other day and it very yummy. I made 8 small ones and used 1 cup of chopped leeks and 1 cup of chopped silverbeet from the garden, once cooked added the cooked potato and blitzed with the immersion blender.

      I added the water in one go rather than adding it slowly to the mix. This was a mistake, as the dough was very moist and I had to add extra flour to get the right consistency so that the dough didn’t stick to my fingers.

      I divided the dough into 8 pieces of about 55g each.

      I used a cast iron reversible grill using the flat side to place 4 Bolani’s at a time to cook for 3 minutes on each side. Then I placed all 4 Bolani’s with the spine facedown and cooked the spines for another couple of minutes.

      So it took about 16 minutes to cook the 8 Bolani’s.

      Worth trying – they are pretty easy to make.
